Dinner Time!

Such a yummy dinner tonight. Honey Mustard Chicken, Parmesan Yellow Squash and Zucchini, and Mashed Potatoes. So good.



And while dinner was cooking, I was busy making my lunch for tomorrow: Salad with lettuce, tomatoes, broccoli, cauliflower, cucumbers and red wine vinegrette dressing. And I'll probably put some leftover chicken on top. This will be a good week!

Yummy

Breakfast this morning was yummy! Toast, peanut butter, sliced banana, a sprinkle of pumpkin pie spice and a drizzle of syrup. Perfect fall breakfast!

Holy Food

So.much.food today.

Why does my mom have to decide to cook so many yummy things on the same day.

So full.

I'm going to let this digest some, then go workout. I got in a short one earlier, but I feel like I need to sweat some more. It will make me feel better.

PB2 Review

I got home to this package waiting for me on Saturday! I ordered two of the regular and one chocolate. (sorry for the crappy phone pictures)


Look how simple the ingredients are!  Roasted Peanuts, Sugar and Salt. That's it!

Nutritional values are pretty awesome too! For two tablespoons: fat:1.5g, carbs: 5 g, fiber 2 g, protein: 5 g =1 WW pp compared to 5 pp's in 2 tablespoons of regular peanut butter.


Now for my official review: I love it.  It tastes like a peanuts. Pure and simple.  It will now be a staple for my peanut butter lovin' self!

Peanut butter cups

I made these lovelies last night.  Super easy to do!

All you need is some chocolate--I used Hershey's milk chocolate chips-- and some peanut butter.

Melt the chocolate (I just did it in the microwave).

I used regular cupcake size liners. 

Add a tablespoon of chocolate, pop them in the freezer to harden (took maybe 5 minutes)
Add a teaspoon of peanut butter
Add another tablespoon of chocolate, pop them back in the freezer.

They are super yummy, I had to try one before I gave them away today.  They are rich.  Next time I'm going with mini cupcake liners and probably a teaspoon of chocolate for each layer and a half teaspoon of peanut butter.  They got good reviews from my dad!

How NOT to make fudge

I attempted fudge last night, for the first time ever. Let's just say the first round didn't go well. I cooked it to long, and it came out in crumbles.  And these were for my co-workers, so I couldn't give them out.  But dad still at some of the crumbles, and it still tasted fine, it just wasn't pretty to look at. :)













 
I can say that batch number two turned out much better, thankfully, because I ran out of peanut butter! Not a good thing to run out of.  It did turn out a little soft, so I could have cooked it probably 5-10 seconds longer.  Still was fine enough to give away to people.
